Grandma's Canned Sausage

During the canning season I can often recall that my grandmother used to take and can sausage patties. She would take fresh made patties and stack them neatly inside a wide mouth jar and then fill the container full of hot sausage grease. She would then place the lids securely on them, turn them upside down to seal and she was done. How I remember going to the food closet and seeing dozens upon dozens of jars carefully stacked upside down. It seems that in those days it was customary to place the jars upside down to ensure a good seal.

Over the years as I grew up and investigated the art of canning on my own I discovered there are two major ways to can sausage. You can form and bake the patties until they are firm similar to the way my grandmother did it or you can fry the sausage up and let it crumble and then fill your jars up.

With the second way you would fry some of the sausage until it started to separate into small pieces and then can these pieces for use in gravies or casseroles. Here are some tips to follow when attempting this on your own.

You should omit any use of sage from your recipe if you decide to mix your own sausage. When canning your sausage the sage will tend to make it taste bitter. I generally use very little herbs and spices in my mix and that also includes the use of my favorites such as garlic or onions as they will actually become stronger tasting when your product is canned. Instead you could use a little bit of hot red pepper, salt, black pepper, some thyme or perhaps a bit of marjoram to season the sausage that you plan to can.

When selecting the meat make certain to choose 2/3 of lean meat to about 1/3 fat in order to make the best canned sausage that you can. You would can your sausage in the same manner as you would ground meat except that you will make small patties and cook it until it's very well done.

Unlike ground beef you can use the fat from cooking the sausage to actual can it in. Be certain not to fill the jar too full, 2/3 full is plenty enough for it. Pour the grease in and make sure that it covers the sausages. You may wish to melt some extra lard to use for covering the sausages in the jar. Keep the lard or grease very hot while it is waiting to be poured into the jar.

Lastly, you will want to adjust the lids onto the jars and place then into a pressure canner set for 10 pounds of pressure. For pint jars cook for 75 minutes and quarts for 90 minutes.

HRM strives to achieve organizational goals and the goals of employees through effective personnel programs policies and procedures. Successful performances of the personnel function can greatly enhance the bottom line of any organization. The personnel practitioners however are challenged more today than at any time in the history by a changing and more demanding labor force that has high expectation about the work place. At the same time, rapidly advancing technologies and outside influences are changing the nature of our jobs. Edward flippo states: "personnel management is the planning, organizing, directing and controlling of the procurement, development compensation, integration, maintenance and separation of human resources to the end that individual, organizational and societal objectives are accomplished."

Cascio "Compensation which includes direct cash payment, indirect payments in the form of employee benefits and incentives to motivate employees to strive for higher levels of productivity is a critical component of the employment relationship. Compensation affected by forces as diverse as labor market factors. Collective bargaining, government legislation and top management philosophy regarding pay and benefits"

In short, wage paid to collar workers or salaries paid to white collar employee can be classified as compensation.

A good compensation package is a good motivator. Hence, the primary responsibility of the HR manager is to ensure that the company's employees are well paid.

OBJECTIVES OF COMPENSATION:

To attract capable applicants. To retain current employee so that they don't quit. The employee is motivated for better performance. Reward desired behavior. To ensure equity. To control cost.Facilitate easy understanding by all i.e. employee operating manager and HR personnel

BASIC COMPENSATION
 
WAGE:
The remuneration paid, for the service of labour in production, periodically to an employee/worker. Wages means any economic compensation paid by the employer under some contract to his workers for the services rendered by them. Usually refer to the hourly rate paid to such groups as production and maintenance employees' wages include family allowance, relief, pay, financial support etc.

SALARY:
Salary is influenced by the size of a company by the specific industry, and in part by the contribution of the incumbent to the process of decision-making. Salary refers to the weekly or monthly rates paid to clerical, administrative and professional employees. Salary is determined by mutual agreement between the individual and the employer.

INCENTIVE:
An incentive scheme is a plan or programs to motivate industries or group performance. An incentive program is most frequently built on monetary, but may also include a variety of non- monetary rewards or prizes.

DETERMINATS
The effective use of incentives depends on three variables. They are:
1. The individual.
2. The work situation.
3. The incentive plan.

Factors influencing compensation:
1. Organization's capacity to pay
2. Prevailing pay and benefits in the industry:
3. Compensation in the industry and availability of special competent personnel
4. Flexibility, i.e. kind of competencies and abilities in managers:
5. Performance/productivity/responsibilities of individual.
6. Organization philosophy such as to be leader or pay prevailing rates.
7. Qualifications and relevant experience.
8. Stability of employment and advancement opportunities.  
 
"Compensation literally means to counterbalance to offset, and to make up for. It implies an exchange. Compensation translates into different meaning among countries and even overtime".

Society View:
According to G.T Milkovich and bloom "perception of compensation differ within countries as well. Some in society may see pay difference as a measure of justice.
 
Stockholder View:
To stockholder, executive's pay is of special interest. In united state stock option are commonly believed to tie pay of executives to the financing performance of the company.
 
Employees:
Employee may see compensation as an exchange of service rendered or as a reward for a job well done. Compensation to some reflects the value for their personal skills and abilities, or the return for the education training they have acquired. The pay individual receive for the work they perform is usually the major source of personal income and financial security and hence a vital determinants of an individual economic and social well being.
 
Managers:
Managers also have a stake in compensation: it directly influences their success in two ways. First it is a major expense competitive pressure both internationally and domestically, forces managers to consider the affordability of their compensation decisions. Studies show that many enterprises labor costs account for more than 50% of total costs. Among some industries, such as service or public employment, this figure is even higher.

In addition to treating pay as an expense, a manager also treats compensation as a possible influence on employee work attitude and behavior and their organization performance. The way the people are paid affects the quality of their work, their focus on customer needs, and their willingness to be flexible and learn new skills, to suggest innovation and improvement, and even their interest in union or legal action against their employer. 
 
FORMS OF PAY

Total compensation includes pay received directly as cash (e.g., base wage, merit increases, incentives, and cost of living adjustment) or indirectly through benefits and services (e.g., pensions, health insurance, paid time off). Programs that distribute compensation to employees can be designed in an unlimited number of ways, and a single employer typically uses more than one program. The major categories of compensation include base wage, merit pay, short and long term incentives, and employee benefits and services.

Base wage
Base wage is the basic cash compensation that an employer pays for the work performed. Base wage tends to reflect the value of the work or skills and generally ignores difference attributable to individual employees. Some pay systems set base wage as a function of the skill or education an employee possesses; this is common for engineers and scientists. Periodic adjustments to base wages may be made on the basis of change in the overall cost of living or inflation, changes in what other employers are paying for the same work, or changes in experience/ performance/ skills of employees.

Incentives
Incentives also tie pay directly to performance. Sometimes referred to as variable compensation, incentives may be long or short term, and can be tied to the performance of an individual employee, a team of employees, combination of individuals, team of employees, a total business unit, or some combination of individuals, teamed unit. Performance objectives may be defined as cost savings, volume produced, quality standards met, revenues, return on investments or increased profits; the possibilities are endless.   

Long-term incentives are intended to focus employee efforts on multi year result. Top managers or professionals are often offered stock ownership or bonuses to focus on long-term organizational objectives such return on investments, market share, return on net assets and the like. Coca-Cola grants shares of stock to selected "key contributors" who make outstanding contribution to the firm's success. Microsoft, Pepsi, Wal Mart and Proctor & Gamble offer stock options to all their employees. These companies believe that having a stake in the company supports a culture of ownership. Employees will behave like owners. 

Incentives and merit pay differs. Although both may influence performance, incentives do so by offering pay to influence future behavior. Merit on the other hand, recognizes outstanding past performance. The distinction is a matter of timing. Incentives systems are offered prior to the actual performance; merit pay on the other hand, typically is not communicated beforehand. 

The national commission on labor makes the following recommendation with respect to incentives:

(a) The application of incentives schemes has usually to be selected and restricted to industries and occupations where it is possible to measure on an agreed basis, the output of workers or a group of concerned workers and maintain a substantial amount of control over its quality.

(b) Incentive schemes have to embrace as many employees of an enterprise as possible and need not be limited only to operative or direct workers.

(c) A careful selection of occupations should be made for launching incentives scheme with the help of work-study teams commanding the confidence of both the employer and employees. The incentive scheme is required to be simple so that the workers are able to understand its full implications. The employers need to ensure that external factors such as non-availability of raw material and components, transport difficulties and accumulation of stock do not exert an unfavorable impact on incentive schemes.
 
(d)   Production has to be organized in such a way, which does not provide incentive wage on one day, and unemployment on the other day- there should be a provision of the fullback wage as a safeguard against it.

(e)    According to Subramaniam, there are several prerequisites to the effective installation and operation of payment system:

a.) It should be developed and introduced with the involvement of the workers concerned in a harmonious climate of industrial relations.
b) Work-study precedes the installation of incentive programs.
c) The wage structure should be rationalized on the basis of job evaluation before devising an incentive plan.
d) The objective to be accomplished through incentives should be defined and accordingly, an attempt should be made to select a scheme, which is most suitable to accomplish them.

BENEFITS & SERVICES

The fringe benefit systems purported to develop a climate for healthy employer-employee relationship, minimize excessive labor turnover costs and provide a feeling of individual security against hazards and problems of life with a view to eventually enhancing employee loyalty to the company and improving productivity.

M.Chandra lucidly describes fringe benefits provided by the employers to their employees under the statutory provision or on a voluntary basis. In addition, other facilities enjoyed by the workers include medical and health care, restaurants, cooperative credit societies and consumer stores, company housing, house rent allowance. Recreational and cultural services, clubs, cash assistance. Some employers also provide education, transport facilities and conveyance allowance.

Laxmi Narain points that fringe benefits are an integral part of the reward system in the public sector undertaking and relate to management motivation similar to basic compensation.

10 Spy Tricks: An Office Espionage Series

I spend a great deal of my time dealing with highly sensitive, highly confidential information. Over the years I have noticed that many of the institutions I have worked with have gone to great pains and considerable expense to make certain their computer systems have state of the art firewalls and "hacker-proof" encoding systems. Nonetheless, they continue to leak data like a sieve!

How can this be? Simple, they are guarding the air conditioner duct instead of the front door.

So, what do I know about it? My knowledge of the field is pretty backdoor in nature.

First of all, I work a lot with people who love nothing more than to stir up hate and discontent wherever they go. They will intentionally uncover and publish sensitive information. It is fun for them. In order to find out why they do these things I do a lot of debriefing with them when an incident occurs.

Second, I have two brothers who made carriers out of law enforcement. One of my brothers served many years as a state trooper and another as a sheriff's deputy. They were both extremely successful in the investigation facet of the job and I am about to tell you why. Then you can see if you are vulnerable to the same kind of attack.

The sources of data loss, in no particular order, are as follows.

1. Waste Archeology.
Simply speaking, someone who really wants to know your secrets will go through your trash. And guess what? It is completely legal. Buy a .00 shredder, and use it.

2. Taps.
Seriously, if you have a wireless system it is pretty simple to eaves drop via laptop from the coffee shop next door.

3. Pop-ins.
Be extremely wary of maintenance crews and repair staff you haven't called in. Check ID's. Also, be aware of someone who comes in asking a lot of questions. You may be surprised what the reception staff will tell someone who smiles and asks nicely.

4. Hacking in.
Do you know the easiest way to hack in to a secure system? Steal the password taped to the computer screen at Ed's work station. Trust me, I see it every day. You know what else? Most people use the same password for every system they need to access.

5. Cordless phones.
Remember most cordless phones and cells are basically fancy radios. If it puts out a signal, the signal can be picked up with a scanner.

6. Ticking bombs.
Answering machines, voice mail, fax machines anything that requires an access code can be beaten (remember the password taped to the computer?).

7. Starbucks.
Never discuss sensitive information in a public restaurant! If I wanted to know about a corporations business, I go to the snack bar at lunch and read the paper over coffee. You won't believe the things you hear (if you're in education, teacher lounges are hair raising!).

8. Brain cramps.
Unlocked cabinets, offices, desks, paper work left out, answering stupid questions over the phone. Hello?

9. Traitors.
Face it, some folks will sell you out for the right price. The right price might be as simple as someone asking, "So, what confidential things are you working on these days?" You really wouldn't believe what people have told me in answer to that question. Keep sensitive information on a need to know basis.

10. Describing a spy.
The typical spy is a short, fat, tall, thin man, with curly, bald hair. She often wears provocatively conservative clothing and is liberally conservative. In other words, ANYBODY is the typical spy.

Now I will expound upon each section individually.

Part 1

One of the first areas I mentioned in breaches in security was "rifled" trash. I believe this to be foremost method of stealing confidential information. In reality it isn't even stealing. In California Versus Greenwood the Supreme Court held the Constitution does not prohibit warrant less search and seizure of garbage left for collection outside the curtilage (the enclosed area immediately surrounding a home or dwelling) of a home. This could include places of business.

Here are some pro-active steps you can take.

1. Don't transfer confidential documents to recycling vendors.

2. If you have a copier, install a shredder next to it.

3. Purchase a cross-cut shredder for extremely sensitive documents.

4. Destroy all waste paper.

5. Get shredders for each individual. People won't wait in line to use a bulk shredder.

6. DON'T KEEP CARDBOARD BOXES OF UNINVENTORIED OLD DOCUMENTS LYING AROUND.

Part II.

Remember, James Bond is not interested in your secrets.

That being said, competitors, disgruntled employees, ex-spouses and other wreakers of havoc are interested in your secrets.

There are many methods of "bugging" out there.

The five main categories are, in alphabetical order: Acoustic, Optical, RF, Tie-In, and Ultrasonic.

1. Acoustic - low tech glass to the wall, ventilation, electrical out-let, out side the window, stand by the door, close proximity listening.

2. Optical - high end and expensive.

3. RF - radio frequency and receiver devices.

4. Tie-in - hooking directly in to a phone line. The box is usually easily accessible on an exterior wall.

5. Ultrasonic - think transmitter, receiver but with audio pressure rather than radio waves.

The most prevalent and dangerous of this is alphabetically and most destructively listed first. Always be aware of your immediate surrounding when discussing confidential information.

Part III

Always check the identification of persons who pop in to do technical work around your office. This is especially true if you PERSONALLY have not called them for service. These folks are known as "spooks".

You see, "Spooking" is a hide in plain site method of gaining access to confidential information

It seems carrying a clipboard will gain a spook access to most places, even those with confidential data to protect.

But, there are other common tools the spook may carry to increase their appearance of authenticity: 2-way Radio, Maglight, Construction worker hard hat, and my personal favorite the attention tone cell phone. Now, this particular ruse means the spook has a partner but is anything more impressive than that tone from the "base office" checking the technicians' status?

However, the most powerful, by far, access granting technique (I mean this will get you in anywhere) is a set of Dickies. Yes, Dickies. The same things you wore for summer jobs in high school and college. They are a virtual cloak of invisibility in our culture.

Most common guises:

1. Telephone/communications technicians - (typically wearing blue/grey Dickies)

2. Computer service technicians - (polo shirt and tan Dickies pants)

3. Copy machine technicians - (polo shirt and blue Dickies pants)

4. Custodians - (typically anyone with a set of blue/grey Dickies is granted cart blanche access)

5. Messenger services - (typically wearing brown Dickies)

6. A/C heating technicians - (typically wearing blue-green Dickies)

The beauty of this type of "spooking" is nobody ever challenges these folks. And if some particularly diligent person does question them, the spook goes into his, "fine with me, but it will be at least four weeks until I can get back here. We're really backed up." That is usually enough to intimidate even the most on top of things staff member.

I don't usually recommend testing out these surveillance techniques, the power of the Tricky Dickie is not to be believed unless you actually see it in action. So, get your lazy brother-in-law a set of Dickies and send him through your office. You won't believe the results. Afterwards, get the lazy bum to do your yard work so you get your moneys worth from the Dickie investment.

Part IV

There are many ways of stealing computer files. As a matter of fact there is a whole niche market dedicated to nothing more than developing and distributing new types of spy ware. Then there is another niche market dedicated to selling protection against these pieces of malware. Folks, I talking millions of dollars each year, connected to these two enterprises. Would it surprise you to know that many of the same people writing the protection software also write the malware?

Any who, how to these insidious pieces of data stealing malware get into your systems? Simple, you or one of your associates, put them there.

I know what you're thinking, "Not me! I would never do such a self destructive thing. Neither would anyone I work with." And, at least intentionally, you're right. But, take look at the most common avenues of entry and think through your response again.

Most Common Sources of Spyware:
1. Screen savers
2. Emoticons
3. Clip Art
4. Spam
5. Email attachments
6. Unprotected web browsing (cookies)
7. Peer to Peer applications (mp3 files)
8. Shareware
9. Freeware
10. Involuntary Download (may present as a fictitious error you must click to correct)
So, have you EVER added any of this to your system, even to an email? I know me too.
Oh well, as MaElla (my grandmother) used to say, "Once bitten, twice shy."

What have we learned?

Basically, don't put anything unverified on your system, even if it is really, really cool.

Part V

First and foremost, never use a cordless phone for anything other than the convenience of answering a call. Switch to a corded line for any specific communications.

Monitoring cordless and cellular phone calls has become a million dollar hobby in America. Some even sell their monitored conversations on line. Think ex-girlfriend sites.

Mobile phones are an even greater liability. Not only are means available to monitor the conversations, but it is not particularly difficult to track the location of the parties based on their signal. Now, that is scary.

This tracking will become even easier when newer 3G phones come online because their base stations are even closer together.

What can you do?
1. Use a regular line for increased security.
2. Dedicate a secure line in your office for sensitive communication. They are not cheap. Or-Com offers one that has fair reviews for about 0.00.
3. Use first names on non-secure lines.
4. Speak in general terms on non-secure lines.

If you think these precautions a completely paranoid, you may be right. On the other hand, browse Spy Emporium for an overview of just a few of the surveillance devices available.

Part VI.

If you work with confidential data, and you use any of the following pieces of technology, it is just a matter of time until your confidentiality is compromised.

1. Disposable roll fax machines.
Used rolls contain copies of every item the machine has received.

2. Unattended fax machines.
Fax machines left on are excellent sources for stealing confidential data. When I expect a fax, I alert the office staff to put it in a folder in my in-box.

3. Dictation machines.
If you use dictation machines and leave tapes on the secretaries' desk to be transcribed don't be shocked when a tape goes missing (Tell the truth, this has already happened hasn't it?).

5. Answering machines.
Most are accessible with a 3 or 4 digit code. Most people don't change the factory set "3, 4, and 5." These are easy to hack.

6. Cordless microphones.
Crystal clear signals for about 1,300 feet or a quarter mile.

Part VII.

One of the most popular and reliable methods for gathering information from an organization is to "scout the perimeter." Although, this is not as sexy as the "mission impossible" methods, it is very popular and very effective.

Here are your most frequent weak spots.

1. The company lunch room. Many people actually carry confidential files with them to review over lunch.
2. The neighborhood coffee klatch. This is true for the same reason as above.
3. The guy who is always at the newsstand when you pick up your paper. You know the one you discuss current office events with because he doesn't know the people anyway.
4. The chatty new friend your spouse just made. Think about this when discussing business with your spouse.
5. Any off-site meeting places. Luncheon rooms, county offices, etc.

Part VIII

Next to going through the trash, the most vulnerable area for exploitation is the human brain.
The major offenders:
1. Unsecured offices, cabinets, drawers and doors.
2. Files left on the desk over night.
3. Group passwords.
4. Company phone directories.
5. Desktop rolodexes.

Part IX

Another source of compromised confidential information is the office traitor. Most people have a price. The price may have been paid the last time they were insulted, degraded or unappreciated at the office. One the other hand, there may be an actual monetary price for which a trusted associate can be turned.

Here are some of the characteristics you may need to be on the look out for.

1. Those passed over for raises, passed over for promotion.
2. Those experiencing significant financial difficulty.
3. Those who gamble.
4. Those that employ recreational pharmaceuticals (including alcohol).
5. Those involved in labor and management disputes.
6. Those that seem to always be on the lookout for the next big deal.

Part X.

Basically, if you take a look at the qualifications for a field agent for the CIA you can build a fair profile of what an office spy may "look like."

1. A Bachelors Degree, rarely more.
2. Solid academic record, not outstanding.
3. Interest in inter-business and international affairs.
4. Solid interpersonal skills.
5. Solid communication skills.
6. Frequent traveler.
7. Interest in foreign languages.
8. Prior residence outside the area.
9. Possible prior military experience.
10. Experience in business and/or economics (but with deficit skills in their own finance management).
11. The person is usually between the ages of 21-35.
12. Previous work in law enforcement or corrections.
13. May be considered a loner, not a joiner.
14. No police record.
15. Hobbies include martial arts, scuba, hunting, proficiency with firearms, chess, math, avid reader, may write prolifically or play a musical instrument, etc.
16. The person may be interested in training manuals and field guides.

In other words, just about anybody who would make a good employee. The key is to look for unusual groupings of these skills. Most people will meet 3 or 4 of the criteria. Those who meet 6 or more should be considered possible candidates.

There's a recent rise in home canning interest. With that interest has come a surge in concern about home canning safety. Most people are turning to home canning in an effort to make healthier choices for themselves and their families. Making them sick is counterproductive!

The truth of the matter is, if you're sloppy about what you're doing, and you don't follow the rules, you create a wonderful environment for problems to occur. However, if you are a conscientious canner who follows USDA approved guidelines, your food borne illness risk is little to none.

What is Botulism?
One of the biggest scares in home canning is botulism. Botulism is caused by a bacterium that is literally everywhere. This bacteria isn't the problem, though. It's when the bacteria enters a perfect environment to grow, it creates a toxin. The toxin is what's deadly.

This rare, but often fatal food borne illness grows well in low-acid, moist, air-free environments. The perfect place to grow a batch of botulism is in a jar of improperly canned low-acid food (like meats or vegetables).

One scary thing about botulism is that you can't tell it's there (unless you're in a lab environment and looking for it). The food infected with it won't look or smell any different.

Symptoms of Botulism
After consuming something containing botulism, it typically takes 12-38 hours (but sometimes up to 10 days) for the symptoms to show up. It's important to obtain medical help IMMEDIATELY. Although only about 20-25 cases of botulism happen per year, about 10% of them are fatal. Treating it early is a key to survival.

Some of the symptoms to watch for include: dry mouth, blurred vision, slurred speech, vomiting, diarrhea, difficulty swallowing and respiratory failure.

Safe Canning = Safe Food
The best way to protect yourself and others from home canned botulism is to follow safe canning practices. Here are some things to keep in mind as you can:
1. Follow all the directions religiously. Don't skimp on processing times. Don't alter the recipe unless it says you can.
2. Use only USDA approved recipes. Yes, this means it's not safe to use your great granny's recipe even though she canned it for years and nobody got sick. Canning practices have changed, as more information is available. Stay on the safe side and use safe recipes.
3. Don't alter the acid content of the food you're canning. Acid and heat are the two major defenses against botulism.
4. Use proper hygiene in the kitchen. Make sure all your equipment is clean and your jars properly sterilized.
5. Make sure your jars seal properly after they've been canned. If not sealed, store in the refrigerator and eat soon.
6. Make sure to have your pressure canner checked EVERY year. This is a free service offered in most areas. Check around and see when and where it's offered near you. It's important to know that your gauge and canner seal is working properly.
7. When opening a jar of low-acid food to eat, boil the contents for 20 minutes to help destroy any germs that could be lurking inside.

Don't let the scare of botulism talk you out of doing your own home canning. Just follow proper procedures and use approved recipes. People have been enjoying the benefits of home canned food for years. Do it safely and you can join their ranks!
