Canning Fresh Green Beans - A Step by Step Guide-Recipe

Canning fresh green beans is very easy to do provided you have the right equipment. Here is a list of what you will need to can your fresh beans.

2. You will need canning jars I always recommend Ball canning jars or Kerr Canning jars,

3. A good pressure cooker is essential with any type of home canning, A great place to purchase one is at a local hardware store that is indecently owned. You may ask yourself well why not go too w mart or some super store? The answer is easy. The people at your local hardware store can answer any questions you may have and I promise you won't get that at any super store.

4. Canning Salt witch can be bought at almost any super market.

5. Lids and Rings, Lids cannot be used from year to hear however you can reuse the rings (that is the screw on part of the jar.

6. A good source of heat, I do all my canning outdoors (as it can get very hot in the summer and that way I don't heat up the house, I do it in the garage) I also use a propane burner as a source of heat.

Well that is about all you will need so here is how we prepare the fresh green beans. Wash, wash and wash again. This is very important. I rinse my fresh green beans in cold water several times no need to dry them as they are going to get fully cooked in the canning process. Cut or break your fresh green beans into bite size pieces, a little over an inch long. Now you are ready to pack them in the canning jars. Take the canning jars and place about one teaspoon of canning salt in the bottom, pack the canning jar full of beans fill the jar with water up to about 3/4 from the top, now place on the lid and screw the cap on (do not over tighten).

Now you're ready to process the beans in your pressure cooker, this is where some people get a little scared, not to worry. Place the filled canning jars in the bottom of the cooker and fill with cold water up to about 1 inch from the top of the jars, now secure the lid to the top of your canner and light the propane burner. Grab a cool drink and once the stem starts to come out of the petcock put on the little pressure flipper. Keep your heat steady and what you want is to maintain 15 pounds of pressure for about 15 minutes, this is a pint size recipe only so if you do quarts consult your canner directions. Store your canned green beans in a cool dark place and they will keep for many months.
