All American Canner Cooker Reviews

Canning is a time honored way of preserving food from your garden and becoming more self sufficient. In modern times, canning has become less popular although at one time it was routinely done so families would have food to carry them through the winter. There are still many families carrying on this tradition and one of the most popular brands of home canners they use is All American.

Pressure Canner

All American 25 Quart Home Canner

Pressure Canner

Canning food requires the proper equipment. A pressure cooker is required in order to create intense heat that kills bacteria. If you just put fruits and vegetables in jars, they will quickly spoil. When a home canner is used, the bacteria are killed and the jars are sealed so food has a long shelf life.

The All American pressure cooker heats and seals the food so when you open it several weeks or months later, it will be safe to eat. It does this by heating under pressure. This can cause inferior quality canners to break down after a few uses. The All American is durable and well built. It stands up to wear and tear and has no gaskets that will crack. The canner is an attractive addition to your kitchen as well being made from stainless steel and having a satin finish.

The All American Canner Cooker 21 1/2 Quart

This canner is built just as well and does the job just as well as the larger version. This one is just a little smaller. It holds up to seven quart jars or nineteen pint jars at a time. It costs a little less too so it is the perfect choice for the average home canner.

Pressure cookers, or home canners, are essential equipment if you want to can your own food. Canning is one of the best and easiest methods for preserving food. It has withstood the test of time and has many advantages over other methods. The All American brand canners are among the most durable and reliable and are always a good choice and this is reflected in the many good user reviews they have received.

There are a few safety precautions you must keep in mind when using a home canner. These are common sense but you should familiarize yourself with them by referring to the owner's manual before using your canner for the first time. If you buy a used pressure cooker and don't have access to the manual, then you can find the information you need on the All American website. If you use your home canner properly and take care of it, it will last you for several years.

Cyber Monday Presto 1781 23-Quart Aluminum Pressure Cooker/Canner Overview

Pressure canning is the only method recommended safe by the U.S. Department of Agriculture for low-acid foods. Doubles as a boiling water canner for preserving fruits, jams, jellies, pickles and salsa in pint and half pint jars. Also handy as a large capacity pressure cooker. Constructed of warp-resistant, heavy-gauge aluminum for fast, even heating. Works on regular and smooth-top ranges. Deluxe pressure dial gauge registers the complete range of processing pressures. This precise measurement is especially important at higher altitudes. Air vent/cover lock allows pressure to build up only when the cover is closed properly and prevents the cover from opening until pressure is safely reduced. Liquid capacity: 23 quarts (21.8 liters).

Cyber Monday Presto 1781 23-Quart Aluminum Pressure Cooker/Canner Specifications

The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 23-quart pressure canner is more than adequate for any home canning needs. It's a professional-quality tool, made of heavy-duty aluminum, with stay-cool handles and a strong-lock steel lid. An accompanying rack fits down into the pot to keep jars up off the bottom, so that liquid can circulate underneath. And it can do double duty as a large pressure cooker. It's easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor.

The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The pressure dial gauge gives an accurate reading so that pressure can be kept constant during canning. This pressure canner is also a cooker that's useful for weeknight dinners or for any meal that needs to come together quickly. An accompanying booklet contains more than 50 recipes, ranging from basic soup stocks to stews and pot roasts--even sweets like English Plum Pudding or Brown Bread! Tenderize lean cuts of beef or pork, or cook chicken, fish, or vegetables faster than you can in a microwave, and without losing moisture.

Nonabrasive cleansers are best for cleaning this aluminum pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. The lid of the Presto 23-quart pressure canner is not immersible. In addition, the sealing ring should be removed after each use to allow cleaning of the inside rim of the lid. The dial gauge is delicate; detailed care instructions are found in the accompanying booklet. The vent pipe is simple to keep clean with a small brush or pipe cleaner, and both the air vent/cover lock and the overpressure plug are removable. The pressure cooker measures 14 inches in diameter (17 inches including handles) and 15-1/2 inches tall (including lid). Presto guarantees this pressure cooker with an extended 12-year warranty. A detailed instruction and recipe booklet is included; special safety issues that pertain to pressure cookers are clearly explained. --Garland Withers

The Challenge of Large Deposits in Teller Capture

The implementation of Check 21, electronic check exchange systems, and the closure of many Federal Reserve Bank check processing centers have prompted a majority of financial institutions scan checks at branch locations. A recent study conducted by the UCLA Anderson School of Business estimates that 70% of US banks have adopted some form of imaging at the branch, while only 35% of teller stations are equipped to capture checks immediately by the teller. The 35% teller adoption rate may be over-stated because it includes two large banks, JP Morgan Chase and Wells Fargo, who image checks at the teller line.

Pressure Canner

Teller capture has only achieved limited adoption - mostly in technologically advanced and progressive institutions - because of wide-spread concerns primarily over implementation costs (scanners and software) and the perceived risk of slower customer service.

Pressure Canner

Numerous articles and white papers have been published on branch capture, along with the advantages and disadvantages of teller vs. back-counter capture. This white paper serves as a brief summary:

Back counter capture
Back-counter capture is essentially Image POD with a remote first pass capture of the items. In back-counter capture, customer facing teller operations remain essentially unchanged. Tellers continue to record only deposits. Deposited checks are stored for later capture on a scanner at the back-counter or back-office of the branch. The branch or a regional/central operations center enters amounts not recognized by the Courtesy/Legal Amount Recognition (CAR/LAR) software engines, makes corrections for missing or incorrect characters in the code line, and balances the transaction.

Advantages:

Least disruptive change that requires relatively limited teller re-training No risk of increased transaction time or wait time for customers Potentially fewer and less time-sensitive courier pickups Lower investment in hardware and software (1-2 workstations per branch)

Disadvantages:

Does not significantly reduce or eliminate back-office operations - which is where the real cost savings are achieved Requires account adjustments and customer notification for out-of-balance deposits Complex exception processing - image quality defects necessitate a call to the branch, to retrieve the physical item if it cannot be recognized or keyed Less opportunity for automated fraud prevention Timely capture - Many institutions struggle with transactions that tend to "pile up" towards closing time

While the majority of banks have selected this option, back-counter capture should be no more than an intermediate step. Back-counter capture does not realize the real benefit of Check21 and image exchange: to record, authenticate, balance, and exchange items directly at the first point of contact and eliminate most day 1 back-office operations.

Teller Capture
Teller capture eliminates secondary processes for most transactions. Each teller is equipped with a scanner and software. The teller scans, corrects, and balances deposits as they are presented by the customer.

Advantages:

Completely eliminates or drastically reduces regional/central processing operations Most deposits are balanced by the teller - no corrections and customer notifications required Opportunity for fraud prevention, since all checks are captured and imaged with the customer present - alert tellers Opportunity to integrate ID capture and authentication at the teller (refer to a recent publication titled "ID Authentication in Banking Applications)

Disadvantages:

Investment in hardware and software Additional device competes for teller station workspace Potential for increased transaction time and longer teller lines Disruptive change that requires extensive teller training to be successful

Most importantly, teller capture makes the front line responsible for servicing the customer, without errors, and without passing problems to the next operation.

Teller / Deferred Deposit Combination
It clearly does not make sense to process very large deposits at the teller line, keeping the customers waiting while the teller scans and balances a large number of checks. Note that customers who regularly make large deposits should be targeted for the bank's lockbox or remote deposit capture offerings, thus reducing the frequency of large deposits. But large deposits will continue to exist, albeit in lower quantities.

Most financial institutions using teller capture are setting a limit for deposits processed immediately by the teller with the customer present. During the initial implementation of teller capture, deposit limits may be low (5-10 items). This avoids longer wait times while tellers become familiar with the new process. But even with low deposit limits, the vast majority of deposits (typically over 95%) are processed entirely by the teller since most deposits are 1-3 items.

Since the initial adoption of teller capture, leading early adopter banks have increased the speed of teller scanners and gradually raised the item deposit limits. A leading large adopter of teller capture recently increased the limit to 100 items. Tellers are allowed to make intelligent judgment calls, deferring deposits during rush hours or when multiple customers are waiting in line. Tellers have three options to process a deposit:

Immediate scan and balance (for the majority of transactions). "Deferred deposit" - teller records only the deposit, and sets the deposit aside. After the rush hour, the teller calls up the deposit and scans and deposits the items. "Send for processing" - teller records the deposit and sends the items for later capture at the back-office or a regional processing center.

"Send for processing" is in most cases a costly exception operation. It requires additional equipment, facilities, staff, and software at the branch (back counter scanners) or time sensitive courier services to take the deposits to another location.

Teller Capture Today
There is a clear move in top 100 institutions towards teller capture. But secondary "exception" processes remain, and they are always labor-intensive, costly, and more prone to errors and fraud. To truly reap the benefits on Check 21, financial institutions need to completely eliminate secondary processes, including back-counter or regional processes for large deposits.

Teller capture technology advancements during the past 5 years are making the arguments against full teller capture obsolete. Let's examine some common miss-conceptions about teller capture, especially related to large deposits:

Teller capture results in longer lines: There is no indication, both from personal observation and customer feedback that this is the case, as long as tellers are allowed to defer deposits during peak hours. Teller scanner speeds of 30-75 Documents per Minute (DPM) are sufficient. When leading institutions first implemented teller capture, most scanners processed at 30 DPM or less in real life production. Higher speeds scanners were bulky, more expensive, or prone to jamming. Over time, most institutions upgraded 30 DPM scanners to 60 or 90 DPM. Today's teller scanners are much faster, with better paper handling and image quality at higher speeds. Market price pressure has reduced the cost of teller scanners, with more performance available today at a lower price point.

Requirements for the Elimination of Secondary Processes for Large Deposits
The elimination of secondary processes for large deposits is very feasible, with the right operational procedures, software, and scanner technology.

Operational Procedures and Teller Training:
To maximize customer service, branch managers must observe the service levels, and give tellers the leeway to defer large deposits during peak hours, or when customers are waiting or in a hurry. A deferral - unlike a back-counter transaction - does not mean that the teller "passes the transaction" on to a back-office or regional center; the teller continues to be the owner of the transaction and simply calls the transaction up for completion during a non-peak time.

Teller Scanner Software and Application
Teller solutions must be user-friendly and minimize the teller workload. They must provide an effective method for the deferral and later recall and completion of deposits. Two critical determinants of transaction time are amount entry and MICR scan line corrections:

Amount Entry can be minimized with advancements in image processing, especially on challenging documents (money orders, items with dark/security backgrounds, or gel pen writing), and by making documents more image-friendly. Advancements in image processing reduce image quality rejects, and the number of items keyed. The industry goal should be to exceed 90% CAR read rates with error rates no higher than human data entry. MICR recognition and accuracy: Teller scanners should read 98-99% of full check code lines with magnetic read only. A further improvement to well over 99% is possible with the combination of optical code line recognition from the image. Institutions may reject optical read of entire checks due to fraud concerns, but most corrections are for 1-3 characters in a code line.

Scanner Technology
Scanner technology and price-performance have improved greatly. Scanner manufacturers design scanners optimized for one speed. This should be the fastest speed offered, although some scanners operate less reliably at the fastest speed. Most scanner manufacturers produce a single product, and adjust the speed by software. Buyers may obtain better terms by purchasing the higher speed initially compared with a subsequent upgrade.

Future-Proofing your Teller Scanner Acquisitions
Speed at the teller line is essential to minimize the disadvantages of teller capture, and to eliminate costly secondary processes. Early adopters of teller capture mostly selected 30 DPM scanners and later paid dearly for upgrades to 60 DPM or learned that scanners did not perform well at higher speeds. Similarly, today most institutions subscribe to the common miss-conception that 75 DPM is the ideal speed for teller scanners, purchasing scanners that will in the future be too slow, too unreliable at faster speeds, or too costly to upgrade.

To future-proof a scanner decision, institutions should:

Consider implementing only fast scanners (up to 150 DPM maximum speed) or at least a mix of 75 DPM for retail tellers with 150 DPM for the higher volume / commercial windows. Lock in the premium for later speed upgrades. Ensure that the scanners have capabilities you may need in the future, such as ID card scanning and magnetic stripe readers for authentication and fraud prevention applications. Insist on an auto-opening feeder for deposits of 100 items. Tellers must be able to scan most deposits with one hand, and without losing eye contact with the customer. Carefully test that faster speeds are achieved in a real application and processing environment. Analyze the Total Cost of Ownership (TCO). TCO includes not only the initial purchase cost and maintenance, but the cost of supplies such as ink cartridges. Avoid custom supplies and operator replaceable parts that increase TCO and require teller training on scanner maintenance tasks. And finally, carefully test and verify that the faster speed does not result in a deterioration of MICR or image quality, jams, repairs and teller maintenance, or a shorter life expectancy of the device.

Salsa Recipes for Canning

Most salsa recipes for canning contain a mixture of low acid foods, such as onions and chilies paired with a traditional tomato base for balance.  Acids like lemon juice or vinegar must be added to prevent Clostridium botulinum bacteria from growing.  Botulism is a deadly toxin which can cause serious damage to the central nervous system or even death, even when consumed in small amounts.  It is very important to use only recipes that have been tested, to ensure the proper balance of acids in order to process your salsa safely when canning.

Pressure Canner

It is highly important to follow the directions listed in salsa recipes for canning recipe exactly.  Use the same amounts of each vegetable listed in the recipe and use the exact amount of vinegar or lemon juice required.  You can safely decrease the amount of spices, but do not use canned salsa recipes that do not follow guidelines set by the Food and Drug Administration.  Do not thicken salsa using corn starch or flour prior to canning, it is unsafe and could cause bacteria to grow.

Pressure Canner

Just as important as it is to follow the directions of the recipe, it is also necessary to follow the manufacturer's guidelines when it comes to pre-treating lids and jars.  Make sure the jars are hot and clean and do not leave any salsa on the lid, wipe it clean with a damp paper towel and place the lids on the jar and screw on metal bands.  When processing salsa using a boiling water canner, make sure to use a rack to keep the jars from touching the bottom of the pot and make sure the water is simmering.  Do not pour water over the jars directly, and put a tight-fitting lid on the pot.

If you use a pressure canner for water bath canning salsa, leave the lid uncovered to prevent a pressure buildup and explosion.  After the jars of salsa are in place, bring the water back to a rolling boil and follow the recommended processing time.  Once time is up, you need to remove the jars without tipping, the salsa could spoil if left in hot water too long, so pay attention to the time, it's very important.  Do not touch the lids or rings, put the jars on a cloth or rack and do not use a fan to cool off the jars or re-tighten the bands after processing.

Once you have processed your salsa, you will want to check the lids the next day.  Make sure your lid is pressed down in the center and that it does not move when you press on it.  Tap the lid with a spoon and make sure you hear a clear, ringing sound, if the jar of salsa is not sealed right, stick it in the fridge and use it up soon.  You can also reprocess canned salsa the next day, but when you do it, be sure to heat it up back to boiling before packing, wipe the rims clean and use a new lid.

Wipe your jars clean and label with the contents and date and remove the screw bands in order to avoid rusting.  You can then store your jars of salsa in a cool, dark place and for the best taste, eat it up within a year.  Heat, frost, freezing temperatures, light and dampness will all affect the quality of your salsa, so put it in a cabinet where it will be safe and stable when stored.  Before you open a jar, make sure your lid is not bulging or leaking and that the salsa still has a good color.  If it stinks, has molded or foam on it when you open it, throw it out or you risk getting very sick.  Salsa is very easy to can at home and once you've done it, you'll never go back to eating store- bought salsa again.

4 Methods of Canning and Preserving Foods

People around the world have canned and preserved food for hundreds of years. There are several ways to can and preserve fresh fruits and vegetables along with some meats. Typically your will find that there are 4 Methods of Canning and Preserving Foods

Pressure Canner

4 Methods of Canning and Preserving Foods

Pressure Canner

The following list the most popular means of keeping food fresh over a period of time. These techniques are not in any particular order and most people choose one or more of the approaches depending on what type of food that they are preserving.

Water Bath Canning - this method is used when canning fruits, jellies, jams, preserves, pickles, relishes and tomatoes. These types of high acidic foods should be processed in a boiling water bath of 212 degrees Fahrenheit to kill bacteria. Processing times vary for each food and jar size. Pressure Canning - this technique is used with low acidic foods which most vegetables fall into except tomatoes (which are really considered a fruit). Temperatures for pressure canning must reach 240 degrees Fahrenheit for a specific amount of time to kill bacteria. Drying - this approach of preserving food is actually the oldest manner of processing and can be used for fruits, vegetables, and meats quite effectively. It has regained popularity among the canning community because the methods are easy, it provides a means of making natural healthy snacks and takes up less space for storing that some of the other preserving techniques. Freezing - this is an excellent way to preserve fresh vegetables and some fruits. It involves a method of blanching foods (quick boiling/steaming) then promptly dipping them in a cold water bath which stops enzyme action. The food may then be placed in either plastic/glass vapor proof containers or plastic freezer bags. Make sure to quickly place the processed foods into the freezer and keep the temperature at 0 degrees Fahrenheit.

These 4 Methods of Canning and Preserving Foods have been tried and true throughout the ages. As more people begin to have growing concerns about their health and well-being many are turning to the ideas of processing their own home-grown foods as a means of knowing more fully what they are eating. There is also a sense of pride and accomplishment in creating a natural food source by your own hands. Try this for yourself. Your family and health will thank you for it.

Review of Logitech Computer Speakers

When it comes to computer speaker systems, you have a lot of choice. However, there are simply some brands that stand way out in terms of sound quality and dependability, and one of those brands is certainly Logitech. Logitech computer speakers are some of the best on the market, and provide a great deal of clean, powerful sound for a very reasonable price. Logitech offers a variety of computer speaker systems, for relatively inexpensive 2.1 2-speaker systems to the power 5.1 and 6.1 gaming computer systems with multiple surround-sound speakers. Whatever you are looking for in computer speakers, it is likely that Logitech has it.

Pressure Canner

Logitech x-230 2.1 2-Piece Dual Drive Computer Speakers

Pressure Canner

Manufacturers Description: Crank up the audio on your PC with this 2.1-channel computer speaker system and enjoy clean, crisp, consistent sound from your games, music, and more. The Logitech X-230's high-tech subwoofer adjusts itself dynamically to deliver distortion-free bass, while the two wall-mountable satellite speakers use Logitech's patented FDD2 technology to eliminate the uneven sound response created by conventional dual-driver designs. The result: a clear, uniform sound field without the "hot spots" and inconsistency of other dual-driver satellites.

Features:

-32 watts total power (6 watts x 2, plus 20-watt subwoofer)

-Frequency Directed Dual Driver (FDD2) satellite technology produces a uniform sound field for full, rich sound

-Dynamic, real-time bass equalization maximizes bass response while minimizing distortion

-Ported subwoofer design displaces more air for deeper bass

-Headphone jack enables private listening

-Master volume and subwoofer level controls placed for quick, convenient access

-Satellite speaker stands rotate for easy wall-mounting

Price:

Value Rating: 9.5 / 10 - This computer speaker system sounds better than some speakers that are 0+ with at least 50 watts of power. It has great crisp sound at nearly all volumes and the bass is surprisingly powerful. Be aware that the subwoofer is not magnetically shielded, and should be kept away from your monitor.

Logitech X-530 5.1 5-Piece Computer Speaker System

Manufacturers Description: Plug the Logitech X-530 into your computer, music player, DVD player, or even PlayStation2 or Xbox game console and immerse yourself in clean, crisp, consistent surround sound from your games, movies, and more. The high-tech subwoofer adjusts itself dynamically to deliver distortion-free bass, while the five wall-mountable satellite speakers use Logitech's patented FDD2 technology to eliminate the uneven sound response created by conventional dual-driver designs. The result: a clear, uniform sound field without the "hot spots" and inconsistency of other dual-driver satellites.

Features:

-70 watts total system power (7.4 watts x 4, plus 15.5-watt center speaker and 25-watt subwoofer)

-Frequency Directed Dual Driver (FDD2) satellite technology produces a uniform sound field for full, rich sound

-Matching front and rear satellites deliver balanced surround sound

-Dedicated center channel makes dialogue clear and intelligible.

-Dynamic, real-time bass equalization maximizes bass response while minimizing distortion

-Ported subwoofer design displaces more air for deeper bass

-Headphone jack enables private listening

-Master volume and subwoofer level controls placed for quick, convenient access

-Satellite speaker stands rotate for easy wall mounting

Price:

Value Rating: 9.0 / 10 - A great step up from the X-230. It has the same great sound, with extra bass and a little more all-around power. The extra speakers are great for a surround sound setting. Only downside is that some games are not compatible with the this 5.1 system. Worth the extra for most people.

Logitech X620 6.1 Computer Speakers

Manufacturers Description: More speakers means more sound, more detail, and more intensity. That's what the Logitech X-620 6.1-channel speaker system is all about. Thanks to its 6 satellites, including a dedicated rear center speaker, you can hook it up to your PC or video game console and enjoy your games, music, and movies with sound that truly surrounds you.

Are you looking for powerful bass? Crisp highs and mid-range? The X-620 delivers. Its patented, powerful pressure-driver subwoofer provides twice the bass of conventional designs for smooth, powerful lows, and the satellite speakers provide rich midrange and crisp high-end tones. Even if you don't have a 6.1 sound card, you can still enjoy the benefits of all seven speakers by using the source selector switch.

Got a Sony PlayStation2, Microsoft Xbox, or Nintendo GameCube? Just plug in the X-620 using the convenient video game console adapter and immerse yourself in the explosions, music, and dialogue of your favorite games.

Comes with 6 satellite speakers and a powered 8-inch subwoofer; 70 watts total system power (140 watts peak).

Price:

Value Rating: 9.0 / 10 - Another hit from Logitech. This one is much like more expensive home theater systems. Truely one of the best speaker systems in the growing 6.1 class. An important note: prepare to buy a pricey
Sound Blaster 6.1 Audigy sound card in order to take full advantage of this speaker system.

The satellite speakers' rotating pedestals allow for easy installation on the wall or desktop.

Features:

-280 watts system power (35.25 watts x 4, plus 39-watt center and 100-watt subwoofer)

-PlayStation2, Xbox, and GameCube owners can plug in the Z-5300e using a console adapter

-Silver speaker accents and removable black cloth grilles

-Conveniently control volume and power with the wired remote, which also features a headphone jack

-Enjoy twice the bass of conventional designs with patented subwoofer design

-Satellites fit on a shelf or mounted on the wall

Canning Food Basics 101

The history of canning food begins back in 1809 when a French confectioner named Nicolas Francois Appert answered the challenge of the French newspaper Le Monde, who had offered a large sum of money to anyone who could invent an inexpensive and effective method of preserving large amounts of food.

Pressure Canner

Since huge armies of men during the Revolutionary War required large supplies of food on a regular basis, preservation was essential. Mr. Appert experimented and observed that when food was cooked inside a jar, it didn't spoil, unless of course, the seal was compromised. He wasn't able to give the scientific reasons behind why the food didn't spoil, but the fact that it worked was enough at the time.

Pressure Canner

Fragile glass containers posed a real challenge during transport, they were replaced with wrought-iron canisters (or as we know them, "cans"). Not only were cans less expensive and quicker to make, they were safer to transport.

The soldiers didn't have can openers, so they used what they had to open the cans, which was primarily their bayonets or a rock. The war actually ended before the canning process and the transport of the canned food could be perfected. In 1814, the factory Mr. Appert had built with the prize money he received from the contest, was burned down by Allied soldiers invading France.

In 1810, a gentleman by the name of Peter Durand patented a process of packaging food in sealed airtight wrought-iron cans by using Appert's methods which were already established. Tinned food was expensive for ordinary people to purchase since it took nearly six hours for the food to cook properly on top of the time it took for each can to be hand-made.

In 1812, the first American canning factory was established in New York City by Thomas Kensett. He utilized an improved version of the wrought-iron cans and preserved vegetables, meats, fruits and oysters.

By 1824, meats and stews which were produced using the method discovered by Mr. Appert, were taken to India by Sir William Edward Parry. Tinned food actually became a status symbol in Europe among middle-class households at that time.

By the 1860's, the canning process took less time, going from six hours to around thirty minutes. Many canning companies began to manufacture in greater quantities after the wars ended in the nineteenth century. They were able to sell their canned food to a wider audience as well.

In response to people in Britain during the Victorian era asking for good-quality food they could store in their pantry, companies such as Nestle and Heinz came on the scene with good-quality tinned food for stores to sell to the working class.

During the First World War, military commanders needed large quantities of inexpensive, yet high-calorie food, to feed their soldiers. The answer was tinned foodstuffs such as corned beef and pork and beans.

After the war, the companies who had supplied the tinned food to the soldiers significantly improved the quality of their goods and thus appealed to the civilian market.

The cans we know today are made from tin-coated steel and are used to transport vegetables, meats, fruits, seafood, and some dairy products.

Canning is a method by which food is preserved by sealing food in air-tight jars, cans or pouches, and then completing the process by heating the containers to a temperature of about 212 degrees Fahrenheit. This high temperature effectively destroys any contaminating microorganisms that could be possible health concerns or that would cause spoilage of the food item.

Those who are just beginning to can foods at home should start by canning high acid foods such as tomatoes or fruits. These foods are safely canned by using the boiling water bath method which sanitizes the food using high temperatures, not high pressure. This is the most basic way to preserve food and since it requires inexpensive equipment, it is a great place to start to learn the art of canning.

For canning with the boiling water bath method, you'll need a large covered water bath canner, a jar lifter, a wide mouth canning funnel, a non-metallic spatula or wooden spoon, a pair of rubber gloves, a clean dish cloth, a heavy dish towel, and of course, canning jars with lids and bands.

Some low acid foods can also be canned using the boiling water bath method since vinegar is used for pickling. Vegetables such as cucumbers, beets, and various beans are all good candidates for pickling. All other low acid foods such as vegetables, meats, dairy, poultry and seafood must be canned using both high temperature and pressure.

Today's pressure canners aren't anything like your grandmother's pressure cooker you may remember. Pressure canners are now lightweight, have thin-walled kettles, and most of them feature turn-on lids. They'll also have a removable jar rack, dial or weighted gauge, gasket, an automatic vent/cover lock, a steam vent (otherwise known as a vent port), and a safety fuse.

Once your tightly sealed, canned jars are cooled, label and date them and then store them in a cool, dry, dark place. Anyone who is willing to follow directions and try something new can master the art of canning.

Vegetables Preservation - The Different Methods

The harvest has been a good one and you now have vegetables in abundance and you certainly don't want to waste all that time and effort by letting the stuff go bad on you. There are many methods for preserving vegetables after harvesting them and the method you choose will depend on the type of vegetable to be preserved and your skills in the kitchen. In this way you can give your family healthy, nutritious meals for a good long while to come.

Pressure Canner

Freezing: is an easy and convenient method of preserving vegetables and it has the added advantage of being the least time consuming of all the methods. It is recommended that you set your freezer at 0 degrees to freeze vegetables. Foods spoil because of microorganisms and enzymes that are present. These enzymes cause the deterioration of food since they promote chemical reactions which include ripening. Freezing helps to stop the enzymes from acting.

Pressure Canner

In order to freeze vegetables properly you need to blanch them immediately after they are harvested. This is one of the best ways to retain nutrients, color, flavor and texture of the vegetables, which can last up to 12 weeks in the freezer. When you blanch the vegetables it prevents the enzymes from continuing to act on them, causing them to lose color and flavor. After blanching, place the vegetables on a baking sheet in a single layer and freeze as quickly as possible - you can try minus 20 degrees. After the vegetables have frozen you can pack them into freezer bags for storing in the freezer. Some vegetables like beetroots need to be fully cooked before freezing and some can be frozen raw.

Canning: is an excellent way to preserve vegetables such as tomatoes, mushrooms and beans that have a high water content. Vegetables that are healthy and disease free should be chosen. Wash them well and then process them in boiling water or a pressure canner. Make sure to use sterilized jars with seal lids that are new. Be very careful not to under process the vegetables especially green beans when using boiling water; the threat of botulism poisoning is very real!

Drying: is also a rather easy process and you don't need any special equipment to get the job done. You can use a dehydrator and if you haven't got one, then use the oven. Choose vegetables that have fully matured, not bruised and diseased ones. There should be good air circulation all through the drying process to prevent the vegetables from spoiling. This process is a long drawn out one so make sure you have lots of time on hand and stock up on patience as well.

Storing: this is by far the easiest method of preserving your harvested vegetables. Root vegetables like onions and squash will last the longest when stored after they have been cured. Fully mature, healthy vegetables should be chosen for storage. Use up any bruised and immature ones at the earliest. You need to clean off the soil and allow the vegetables to dry well before you store them. Don't forget to keep a small stem on your root crops.

Canning Your Own Food to Save Money

You gotta admit this is brilliant; canning and food preservation. People have been doing it for a very long time and it's growing in popularity thanks to the recession. Anything people can do to save money is worth considering and canning food is high up on the list.

Pressure Canner

In our town we even have a community garden where people can tend their own plot of land for free, they just have to keep it weeded and out of other people's areas. The food grown there is being stored in massive amounts, as much as they can get.

Pressure Canner

Canning is big in my family, especially on my husband's side. My mother in law is great at canning and will devote a full day to the event in order to get as much done as she can. During the winter when we get to eat the fruits of her efforts we're all quite grateful. She's very particular about safety and is always sure to use the right kind of cans or jars, the right pressure canner and label everything so we know what it is and when it was done. Don't want to let anything spoil or rot.

Her favorite things to can are meats, fruits and vegetables. We also freeze fresh corn for winter use and that's always a big hit. These are all pretty big jobs to start and you can't just quit in the middle. But the efforts are obvious and immediate. The tools are easy to clean up and now we have food in storage to be eaten later. I love it!

Are Cardiac CT Scans Suitable For Everyone?

How do doctors determine whether their patients have developed heart problems? In the past, invasive angiogram used to be the common and unavoidable procedure doctors will employ. But now, more and more doctors are switching to cardiac computed tomography (CT) scans.

Pressure Canner

It is known that there are at least 16 different types of CT scanners available nowadays in public and private hospitals. But doctors do caution that while these scanners promise a clear picture of the heart through non-invasive technology, they are not suitable for all heart disease patients.

Pressure Canner

According to one cardiologist, "people with heart-related symptoms like chest pain or shortness of breath and who have got abnormal or unclear results from stress test will benefit from these cardiac CT scans."

Cardiac CT uses X-ray imaging to take images of the heart timed to the heartbeats to avoid motion blurring. It can provide information about the extent of blockages by detecting the amount of plaque build-up in the arteries. Compared with invasive angiography, the CT coronary angiogram is highly accurate.

Electrocardiograms (ECGs) and treadmill tests are not very useful for preventing heart attacks, pointed out by another heart specialist. Published studies show that two-thirds of heart attacks occur in patients with 40 to 60 percent narrowing of arteries, yet this is not picked up on treadmill tests or ECG.

He admitted that cardiac CT has done away the need for invasive coronary angiograms in his practice. His many years of experience indicate that once patients see that their scans show blockages, they usually opt to start on medication right away. A trial of more that 2000 stable heart patients completed in 2006 in the United States showed that patients do just as well on aggressive drug therapy alone as they do with angioplasty thrown in.

Medical therapy is not inferior to stenting. Stents are just devices that are put inside blood vessels during angioplasty to keep vessels from narrowing again. Thus, invasive procedures can be prevented.

Nevertheless, risks and certain side effects do arise from using cardiac CT scans.

For example, the contrast dye injected into a patient may cause an allergic reaction, but this is rare. It can also compromise kidney function for people who have kidney problems. Moreover, the exposure to radiation is found to be equivalent to 600 chest X-rays. However, technology is improving and a new dual-source CT scanner which takes X-ray images faster than from a single source does reduce the radiation that a patient is exposed to by 50 to 70 percent.

Walk the Mile With Payless Shoes

Payless is a leading shoe brand company which started out in 1956. The company has its headquarters in Topeka, Kansas. This retail industry not only sells shoes but also deals in accessories and hand bags. Payless shoes are termed as the largest company when it comes to footwear for the entire family in the entire western and northern part of the globe. Payless shoes has its stores in the entire unites states and beyond the country it has stores in the Caribbean countries, Canada and one in Japan as well. They are market leaders when it comes to shoes in the U.S.

Pressure Canner

One in every 10 shoes for adults is a Payless shoe and one in every six shoes for children is another Payless shoe. Critics have noted that the stores of shoes resembled wholesale marts and were not particularly suited to draw in customers who would like a good display first before them, before they like the actual product. The big heads in the company got thinking and came up with innovative design alterations in the company looks. Major changes in the design of the retail outlets were taken up in the year 2005. The outlets were revamped and the brand logo also was changed to make it look more hip, thought the trademark orange was still retained. The new logo came into force on June 27 2006.

Pressure Canner

The company has had its share of ups and downs as well. Payless Shoes Company has been under critic's scanner too many a times due the company's strategy to open up stores in historic buildings and then changing their facade into something completely hip, this completely changes the look of the building and strips it off its character. Like a leading website states, "Payless is a notorious abuser of historic buildings". The company had to witness a sag in its performance in the year 2005 under pressure and competition from another leading company Wal-Mart. The critics termed them as some of the ugliest in the market, this then led to the subsequent revamp of the stores and the company as a whole. The company saw a significant merger with Stride Rite at a price of .50 per share. Its name was then changed into Collective Brands. Payless Shoes are going up and strong and periodically come out with new collections every year.

As our supply of petroleum products becomes more expensive, substitutes such as oil from grain and soybeans become more economically feasible. New materials need to be developed to replace the plastics made from petroleum.
As streets become more congested, other means of personal transportation become more desirable. More efficient means of directing traffic are necessary.

As the population ages, better wheelchairs, methods of going from one floor to another in private homes, and kitchen utensils for hands crippled with arthritis will be more in demand.
Sports equipment is improved every year.

Pressure Canner

As our standard of living improves we have both more free time and more discretionary money. These factors open up the opportunity for more leisure time products. There is always a market for new games.

Many sports are dangerous. This opens up the opportunity for better safety equipment.
As we search through the channels on satellite TV we find more and more shows featuring do it yourself home improvements. Keep your imagination in high gear anytime your doing a chore around the house. I have a fairly complete workshop, but I was amazed at the new tools in the 2006 Sears tool catalog. A few years ago a box end wrench came onto the market with a geared end that acts like a ratchet.

Now there has been a hinge added to the handle so that the wrench handle does not have to be exactly in line with the bolt head or nut. I am working on an engine that was designed to pack the most H.P. in the smallest possible space and found it almost impossible to get at some fasteners without a hinged gear end wrench that was not even available a few years ago. The end wrench went unchanged for generations until some creative mind added the hinge.
There is a huge market for automotive mechanical and body tools.

Years ago I designed and built automated machinery that, among other things, monitored the current required by the motors and warned the operators when the tools were getting dull. At the time only a large manufacturing company could afford this technology, but with the present state of the art in electronics, it should be practical to have a control that could be preset for a given diameter of a drill bit and the home drill press would turn the proper RPM and have the proper pressure on the bit.

Although woodworking has been around for thousands of years there are still opportunities to improve on woodworking tools.

The wheel has been around forever, but now check out the Tweel. At www.time.com/time/business/article/0,8599,1129516,00.html

Look around your kitchen. Why not put a digital temperature readout on the handle of a frying pan? My wife can look at a pot of coffee and tell if it is too strong. Why not an optical scanner to check the darkness and turn off the pot?
There is always a better way to do anything.

I guess you have the idea. As you move through this life keep your creative mind in gear for ways to improve our well being.

Keep notes and dates of all your thoughts. Make sketches. Is It Novel? Is there anything like it on the market?
In order to obtain a patent your idea has to be useful, novel, and not obvious. You must also apply for a patent within one year after the device has been offered on the market or described in a publication. The invention must serve some useful function. You can't patent an idea. You must be able to describe it with words and sketches in such a manner that a person skilled in the technology can build or use it. Before you spend too much time and money on your ideas see if you have any competition.
You think you have a novel idea for a gizmo that will save you one hundred hours of work a year. That should be worth something, but how do you know that it's original?

The best place to start is with a search engine on the internet. Think of every way you can to describe it. Use key words from your descriptions and search places like E-Bay, Yahoo, google, and AltaVista. If you need help with key words, you can take a free course at Cambridge Rindge & Latin School.

By clicking on: www.crlsresearchguide.org/00_Introduction.asp
This is also a great site to learn to do basic research. When searching on E-Bay, search in "All Categories" because some sellers make a poor choice of categories when selling a product. Lets say you just invented the paint brush. Until now there is no such term as "paint brush". What would you call it? Applicator? Applier? Spreader? Coverer? Brush? See what I mean? If you can't find anything like it on the market, then do your own preliminary patent search. You can do this free on the internet. I will cover this more in a later article.
